I am an American girl…what else can I say? We Americans’ love our dips, dressings and sauces, and nothing is quite complete without them smothered all over our food. I think it is more about the sauce rather than the food. I ran into this amazing sauce the other day while looking for a vegan version of a cilantro sauce I could put on my seitan tacos. It is unreal. Super creamy, full of flavor and compliments any taco, burrito or even any salad perfectly…I can even dip veggies in it! The best part is there is no dairy, so no unhealthy fats…just the “good for you fats” from the avocado and olive oil. I could actually eat it straight from the spoon.
- 1 Whole avocado
- 1 Bunch of cilantro
- 2 Garlic cloves
- 1/4 Cup olive oil
- 1 Tsp. white wine vinegar
- 1/2 Lime – 1 whole lime ( juice only)
- Salt to taste
- Place all ingredients in your food processor, and pulse until everything is smooth and creamy.
