Avocado & Tomato Toast

So, what happens when you add all of your favorite things, moosh them all together ( ok…don’t really moosh them, that is gross ).  Let’s say instead to stack them all together starting on a fabulous multi grain toasted bread for the bottom layer with smooth silky avocado spread on top, then fresh ripe juicy tomatoes on top of the avocado, and topped with a glorious perfectly cooked poached egg, and finished with a beautiful drizzle of the greatest olive oil ever.  I am biased…It comes from the town I live in, in Spain…nothing better!  Sprinkle a little bit of finely chopped chives, and you will be officially in breakfast heaven.  I love to have mine with a warm green Matcha tea with lemon….Hungry yet?   It is a perfect recipe to keep you full, and add some great vitamins in your body. So ready…set…go!

Toast the bread on a griddle or flat pan until browned how you like it. Smash up the avocado, until smooth and without chunks.
Spread avocado on the bread, and place the slices tomatoes on top. Poach the egg, and gently place it on top. Garnish with garlic powder, salt, pepper and chives. Drizzle with olive oil to finish it off

This all in one breakfast is a great way to start your day. All if your essential vitamins, and enough protein to keep you full until lunch!
  • 1-2 Slices of your favorite multi-grain bread
  • 1 Tomato ( sliced)
  • 1 Whole avocado
  • 1-2 Poached eggs ( depending on how many you want to make )
  • Garlic salt to taste
  • Salt & pepper to taste
  • Finely chopped chives for garnish
  1. Place bread on a grill pan or griddle and toast
  2. Cut open the avocado, remove the pit, and scoop out the inside into a bowl and mash well
  3. Spread onto the toasted bread, then layer the tomato, and poached egg on top
  4. Garnish with salt, garlic salt, pepper, and chives
  6. Add a small dash of vinegar to a pan of steadily simmering water.
  7. Crack eggs individually into a ramekin or cup.
  8. Create a gentle whirlpool in the water to help the egg white wrap around the yolk.
  9. Slowly tip the egg into the water, white first. Leave to cook for three minutes.
  10. Remove with a slotted spoon
  11. Drain onto a paper towel
