Overnight Oats with Mixed Berries and Slivered Almonds

We all love those midweek mornings, from the moment the dreaded alarm goes off, we need to wake up the kids, get dressed, get them dressed, feed them breakfast, tie shoes, comb hair, brush teeth, get backpacks ready, run out the door.  Darn. Forgot my breakfast.  Again. That is the, let’s see…..6th time this week.  Oh brother.  If only there was something that I could grab on my way out, or even munch on while getting the kids ready, let alone even remember. Even though my morning basically consists of voice raising, chasing, and performing rodeo style techniques to get my kids to cooperate…I could still manage a bite of something in between tasks.  Theis recipe for quick oats is great, because it can be made the night before, and you can add just about anything you can think of ..apples, raspberries, blueberries, pumpkin, chia seeds, walnuts, cashews etc… the combinations and variations are endless. Start your day, with a protein and vitamin packed little jar, and be on your way! The best part is that it kind of tastes like oatmeal cookie dough which I would never complain about.

Place in the fridge
Plce the jar into the refrigerator overnight. In the morning, remove the fridge, and add the berries and nuts.
