Cauliflower Alfredo Penne Pasta

 

Let’s face it. Alfredo sauce is oh so addicting, and we all feel so guilty after devouring a plateful, and vow we will never eat it again. This sauce is such a great substitute. It is rich creamy, and the Parmesan and roasted garlic gives it a smokey flavor. This healthy sauce will go straight to your heart and not your thighs, and that is a plus!

Ingredients
  1. 1 Medium head cauliflower ( chopped into small florets)
  2. 1 Head ( 8-9 cloves) roasted garlic
  3. 1/2 Cup Parmesan cheese ( grated ...but not from the container)
  4. 1 Package whole wheat Penne pasta
  5. Salt and papper to taste
Instructions
  1. Start with roasting the garlic. Cutting off the top of the bulb, a quick drizzle of olive oil, and a wrap in in foil.
  2. Place in the oven at 400 F / 204 C for 20 minutes
  3. Remove and unwrap. Gently squeeze out the roasted garlic. Set aside
  4. Pour a package of whole wheat penne pasta ( or one you like) , and cook until done. Set aside
  5. Chop the cauliflower into small florets, removing the stalks
  6. Place in a large stockpot with water, and cook until tender
  7. Once fully cooked, drain and set aside, conserving 1/2 cup of the water
  8. Place cooked cauliflower, grated cheese, cooked water, roasted garlic cloves, salt and pepper
  9. Blend until smooth. Add more cauliflower broth until you have your desired consistency
  10. Use the sauce right away or store and put in the refrigerator.
  11. Enjoy!
