Cauliflower Buffalo”Wings”with Ranch Dipping Sauce

As a kid, I was always look forward to the super bowl.  I love football.  Yeah, I am totally kidding.  I was interested for 2 reasons: the commercials and the food.  My Mom and Nana used to go all out, making everything under the sun.  Bean dip, chips, onion dip, wings ( which I never touched, because they grossed me out for some reason) and plenty more junk food.  Now that I live in Spain, there is no super bowl, no bean dip, and definitively, no wings, which is ok.  But I miss the flavors of good ol’ merican food sometimes, and I mean SOMETIMES.  The food here is great.  So I tried out some faux hot wings with cauliflower.  They are crispy on the outside and soft on the inside, with a kick at the end.  I am not trying to replicate a chicken flavor people, just the heat, textures, garnishes and all around concept, so don’t be disappointed if it doesn’t “taste like chicken” 🙂  This goes great with my healthy ranch dip. This is also a healthy alternative as well.  Let’s put on our jerseys for whichever team has the prettiest colors ( that is how I always picked the team I was rooting for), and get ready for some amazing commercials & mock wings!

Chop up the head of cauliflower into smaller florets. In a medium bowl, drizzle with olive oil and toss well.

After tossing, add the breadcrumbs. I find it easier using my hands rather than a spoon for the breadcrumbs to stick.

Place on a baking tray lines with parchment paper, and bake for 20 minutes. Remove from the oven, and toss with hot sauce. Place back into the oven for another 15 minutes until the outsides are crispy. Serve with your favorite ranch sauce!

These little cauliflower bites are a great alternative to the typical chicken wing, and they have just the right amount of heat!

Ingredients
  1. 3/4 Large cauliflower cut into small florets
  2. 2 tbsp extra virgin olive oil
  3. 1/2 cup Panko breadcrumbs or regular breadcrumbs
  4. 1/2 cup of your favorite hot sauce
Instructions
  1. Preheat oven to 450 degrees F.
  2. Chop up cauliflower into small florets
  3. In a large bowl, drizzle olive oil over the cauliflower and toss to coat well.
  4. Pour the breadcrumbs over and toss with either your hands or a spoon to coat
  5. Place cauliflower onto a parchment lined baking sheet and spread out into one layer.
  6. Roast for 20 minutes or until the cauliflower is fork tender
  7. Take out of oven and pour back into the bowl with hot sauce. Toss to coat again. You can add more breadcrumbs if desired as well.
  8. Place back on baking sheet and roast for another 10-15 minutes or so until cauliflower starts to get crispy.
  9. Remove from the oven, and serve with ranch and celery
