Chocolate Chip Oat Banana Muffins (vegan)

I remember as a kid going to Costco with my Nana to get a 12 pack of muffins for the upcoming week.  Chocolate with chocolate chips, blueberry, and some other random flavor, that I never ate, because it was gross to me.  I think it was banana nut.  I would totally love that now though.  Ok, now I am hungry.  I would take a bite out of each muffin, and save them for later.  Who on Earth could eat an entire Costco muffin?  Certainly not me.  Well, now that I am an adult, I can’t eat ginormous muffins throwing all caution to the wind…well, I could but that would be awfully irresponsible now wouldn’t it?  So I have found the cutest, healthy, chocolaty, quick, easy, ( I could go on, and on…) muffins!  They are great for those mornings when you are in a rush, and don’t have time to make that million dollar health breakfast.  These little oat muffins are three bites max, so you can eat a few, and since they are full of protein, they will make you feel fuller, longer.  Air high five!  My kids even ask for these as a dessert which is great.  They think they are getting a sweet treat because of the chocolate, but they don’t know how much good stuff is in them!

Mash up the bananas, egg mixture, vanilla, and brown sugar until it is smooth. Add the cinnamon, salt and baking powder.

Stir in the oats and the milk. Gently fold in the chocolate chips.

Mix the batter until everything is combined. Add the mixture in the muffin tins about 1/4 full. Bake at 350º for about 18-20 minutes.

Ingredients
  1. 2 3/4 cups oats
  2. 1 cup dark chocolate chips
  3. 1/2 banana mashed
  4. 2 tbsp ground flax +6 tbsp water OR 2 eggs ( for non vegan version )
  5. 1 cup of oat, almond OR regular milk
  6. 1/3 cup brown sugar
  7. 2 tsp baking powder
  8. 2 tsp cinnamon
  9. 1 tbsp vanilla extract
  10. Pinch of salt
Instructions
  1. Preheat oven to 350°F. Spray a muffin pan with nonstick cooking spray
  2. Whisk eggs, mashed banana, brown sugar, and vanilla until smooth. Stir in cinnamon, salt, and baking powder. Stir in oats and almond milk. Gently fold in chocolate chips.
  3. Spoon into the muffin pan (about 1/4 cup per muffin)
  4. Bake for 18-20 minutes until oatmeal is browned and not too soft in the middle.
  5. Cool slightly before attempting to remove from pan or they may stick
