Crispy Kale Chips ( vegan )

Sometimes, when I am cooking, I glance to my right when the goodies are for the kids, and there are always some kind of chip.  (Yeah, my kids don’t eat vegetables all day long)  I casually walk over, quietly open the bag, and eat a few, making sure nobody can hear me.  Why do I feel so guilty that I need to hide?  I am not sure, but it just feels so bad, but so fulfilling at the same time.  Then once the high wears off, I feel awful…damn it!  Why did I do that?…I need an alternative.  So, here they are …crunchy baked kale chips!  These are seriously addicting, and fulfill that craving for that fatty, salty, crispy madness.  Munch on these chips when you are doing anything, and feel good about it.  Since they are baked, all of the vitamins are preserved, and not removed during the cooking process. So crunch away, and enjoy!

Pour on the olive oil, and massage the kale leaves to make them softer. This is also a great stress reliever! Make sure to coat each leaf.
Add your spices of choice together and toss well. Spread the leaves on a baking sheet, making sure that the leaves are not touching each other. This will ensure none are soggy. Bake for 7-10 minutes, but be careful not to burn them!

Serves: 1 small bowl
These delicious crunchy kale chips are a great replacement for the traditional potato chips!
  • 1 Bag of kale
  • 1 Tbsp olive oil
  • 1 Tbsp garlic powder
  • 1 Tbsp of your favorite spice blend
  • Salt to taste
  1. Preheat oven to 275º
  2. Wash and rinse kale
  3. Cut off the stocks, leaving the leaves only
  4. Place in a bowl, and add olive oil
  5. Massage all of the kale with the olive oil, to make it a bit softer
  6. Add the rest of the ingredients, and toss well
  7. Spread on baking sheet, making sure no leaves are piled on top of another
  8. Bake for about 7-10 minutes
  9. Remove when slightly browned, but not burned
  10. Enjoy!
