Ok, so I am literally just so excited….our grocery store in the small town we live in just started carrying kale!!! OMG. This probably sounds so seriously silly to everyone else, but for me, this is so big!! Kale is such a super food in a vegetarian diet, or any diet really. It is a member of the cabbage family, chasing away free radicals…because who wants those?! It is loaded with Vitamins A, K, C and a cancer fighting powerhouse…so when I saw it here, I screamed ( really loud in my head), because then I would look like the crazy American gal yelling at lettuce in public. Strawberries are now in season here which is super exciting since I eat them like candy. So put the two together, and add some of my other favorite things, and you got yourself and amazing power punch salad, full of fiver, iron, omega 3 , protein, and just about anything else. My husband is not crazy about the flavor of kale, so this salad has a ton of different flavors to mask it ( just in case you are not of fan of the taste, but love the benefits of it). So, kale yeah!! Try this salad yourself!
- 5-6 Cups Fresh chopped kale
- 1 Cup Strawberries ( diced )
- 1 1/2 Avocado ( diced)
- 1/ Cup raw slivered almonds
- 1/2 Cup crumbled feta cheese
- 4 Tbsp.Olive Oil
- 2 Tbsp. Balsamic Vinegar
- Salt to taste
- Wisk the liquid ingredients until blended well. Set aside.
- Place kale in a large bowl and toss in all ingredients
- Pour dressing on top, and toss together
