Light as a Cloud Mini Berry Trifles

These little puppies are super rich in antioxidants, vitamin C and healthy fats.  You can even use the biscuits that are high in fiber, and because they are crushed, you won’t even be able to tell the difference!  My kiddos love these as a snack after school, or as dessert after a big meal.  They love to eat these up, just as much I love to feed em’ to them!  I love them too.  It is a great guilt free treat, that is actually good and good for you…I am starting to sound like a commercial now, sorry.  But really..these are fun, yummy, and easy to make.  You can even mix up your toppings and fruit.  I used strawberries and blueberries, because they are my kids favorites 🙂

Light as a Cloud Mini Berry Trifles ( vegan )

This fluffy little cups of magic are packed with flavor and vitamins. My kids love them, and eat them up like they are something oh so unhealthy YAY! The cream is dairy free, and the recipe may be found here:

  1. 1 Cup diced strawberries
  2. 1 Cup blueberries
  3. 5-8 Sweet biscuit crackers of any kind ...I use high fiber ones ( or graham crackers will work too )
  4. 1 1/2 cups of non dairy cream ( find the recipe below)
  1. Dice up strawberries
  2. Smash up biscuits with a rolling pin until you have crumbs
  3. Start the layers in your cup with the crumbs first, then add a little cream, blueberries, cream, strawberries, cream, and the top it off with more crumbs.
  4. You can add more crumbs in between layers if needed
  5. Enjoy!
