Southwestern Rice with Black Beans and Zucchini

Ah, the first day of school.  The sun shining, birds chirping, me doing the happy dance the whole way to school.  Not to say, I will not miss my kids all day, which in about 15 minutes, I will totally start sobbing and miss them so much… their fighting, arguing, giggling together, enjoying being together, building Legos together, then fighting again.  Those were the days, but the summer was long.  I mean. long.  So long that I think I added 4 or 5 recipes the entire summer.  That is bad.  So I apologize.  I will be regularly adding new plant based recipes much more often in the weeks to come for your tasting and viewing pleasure.  So let’s start off with Southwestern Rice with Black Beans and Zucchini.  This can be a great side dish, but has enough health benefits to be a kick ass main dish as well.  Don’t be skeptical about the zucchini ( which I know you all are), but trust me…it works!  It is super easy and quick to throw together, and full of flavor!  Eat your veggies!

Ingredients
  1. 1 cup white or brown rice
  2. 1 zucchini shredded
  3. 1 bunch cilantro finely chopped
  4. 1 can black beans
  5. 1 cup frozen corn
  6. 2 garlic cloves
  7. 1/2 lime
  8. 1 tbsp vegan butter
  9. salt and pepper to taste
Instructions
  1. Cook rice and garlic according to package directions, place in a large pan
  2. Cook beans for 10-15 minutes in low to medium heat, add to rice
  3. Cook corn on medium to high heat until toasted and brown, add to rice
  4. Shred zucchini with a cheese grater, and squeeze in your hands, to remove the liquid, add to rice
  5. Add lime juice, cilantro, butter, salt and pepper
  6. Toss well, and heat thoroughly
