Stuffed Apple Bowl Crisp (vegan)

Every year, I cannot wait until Autumn.  It is my absolute most favorite season, so when it is over, I get into an “Autumn funk” if you will.  A sadness that leaves with the season, when winter starts.  The Autumn smells in the air are just so dreamy…pumpkin, apple, nutmeg, all spice, and that is about it.  I love it all.  So I discovered this recipe, when fall was far gone, and spring is upon us.  That will not stop me from going back in time.  Luckily these little guys can be eaten all year long ( or at least I just tell myself that, as an excuse to eat them whenever I want.  I am now pretending that they are for the Fourth of July, and omitted the nutmeg…sneaky huh?  The little apple bowls are so cute and hold all of the cinnamon apple-y goodness inside, and the buttery soft oat crumble on top  …ahhhhh. Heaven.  There is nothing more to say about this recipe but YUM.  There will definitely be fireworks in your mouth after one bite…I think Fourth of July is my new favorite holiday.

In a medium bowl, add flour, cinnamon, sugars, and cold pats of butter. Smash with a fork, until a crumble forms. Peel one of the apples, and dice into small pieces.
In a small sauce pan, and medium heat, add the apples, brown sugar, butter and cinnamon. Cook for about 8-10 minutes, or until the apples are tender.
Slice off the tops of the remaining apples, and scoop out the insides forming a small bowl. Add the warm apple mixture. Place on a lines baking sheet, and bake for 15 minutes, or until the tops are brown and crispy.

These cute little bowls, are stuffed with apple goodness, and topped with dairy free ice cream, and a drizzle of caramel.

FOR THE APPLE FILLING
  1. 4 large Gala apples
  2. 4 tbsp margarine or vegan butter
  3. 1/2 tsp cinnamon
  4. 1/4 cup brown sugar
FOR THE CRUMBLE
  1. 1/2 cup of flour
  2. 1/4 cup brown sugar
  3. 1/4 cup of oats
  4. 4 tbsp margarine or vegan butter
  5. 1/2 tsp cinnamon
  6. 1/4 cup granulated sugar
Instructions
  1. Preheat oven to 400º
  2. Start with the crumble. In a medium bowl mix flour, sugars, and cinnamon. Add the pats of cold butter, and smash with a fork, until a crumble forms
  3. Peel one apple and dice it up. Heat up a saucepan on medium heat, and add apples, cinnamon, butter, and brown sugar. Cook for about 7-10 minutes or until the apples are tender.
  4. Cut off the tops of the remaining apples, and scoop out the inside until you have a bowl formed on the insides. Do not scrape too much or the walls of the apple will be too thin to hold the apple mixture.
  5. Fill the apple bowls with the warm apple mixture, and top with the crumble mixture.
  6. Place apples on a lines baking sheet, and bake fo 10-15 minutes, until the crumble topping is brown and crisp.
Notes
  1. You can add caramel drizzle and ice cream as a suggestion. They are great with or without!
