Vegan kickin’ Pad Thai

What is it about spicy things that make us break out in a sweat, because the spice is enough to make us cry? Yet…we take another bite begging for more pain?  Why must we suffer when we eat? Um…I dunno, but I love it!  Okay, this dish is not that spicy, I am being over dramatic like always.  But it has that little kick to seriously wake up the senses.  Sriracha is a “must have” in the pantry, because it is pretty darn near a perfect sauce.  Geez…you can put it on almost anything, and it will be a perfect a dish. ( Don’t go around putting on desserts or anything…ok wait…I will work on that).  This little bowl of heaven has everything…noodles, spice, crunch…what is that?  Oh…cilantro too!?  Crazy talk.  It looks time consuming, but trust me…it is not.  Quick, simple, and oh so yummy!

  1. 1 Package white Pad Thai rice noodles
  2. 1 package firm tofu ( non GMO if possible)
  3. 1/2 Cup shredded carrots ( bagged is fine)
  4. 1/2 Cup shredded purple cabbage
  5. 2 Shallots ( diced )
  6. 1/4 Cup of scallions ( chopped )
  7. 2 Garlic cloves ( minced)
  8. 1/4 Cup toasted peanuts
  9. 1 Bunch cilantro ( chopped )
  10. 1 Lime ( juice only )
  1. Sauce: Combine all ingredients in a bowl, and whisk until smooth.
  2. Pad Thai: Cook rice noodles as indicated in package, drain, and rinse with cold water, then set aside.
  3. Toast Peanuts until golden. Set aside.
  4. Chop all of the veggies. ( Scallions, cabbage). Dice shallots, mince the garlic, roughly chop the cilantro ( remove the stems), and chop up the toasted peanuts.
  5. Slice the tofu in half ( horizontally)
  6. Place in a frying pan with 1 tbsp. of olive oil, and cook until both sides are browned. Then place on cutting board, and cut into small cubes.
  7. In the same pan as the tofu, add the shallots and the garlic, and cook until transparent
  8. Stir in the sauce
  9. Bring in the noodles, tofu, and the rest of the veggies, ( except cilantro + peanuts ) and stir until everything is well coated.
  10. Cook on medium heat until everything is hot and mixed well
  11. Garnish with cilantro and peanuts
  12. Enjoy!
