I think in every family, there is a famous meat and potatoes dish, reconstructed in some way.  In my family, we had pot roast, with carrots and potatoes.  It was not my favorite meal, because I was never a red meat lover.  The thing that drove me nuts about it was the fact that everything was mushed together which I loathe so much.  I don’t like to have my food touching, and I ALWAYS eat one thing at a time.  So my Nana would need to place each item on my plate like a fraction math problem, or some kind of science experiment.  While I have never really grown out of that weird habit, this plate of Vegan Meat and Potato Stew with Peas is a giant mixture of flavor texture and healthy goodness all mixed together…normally which would normally be a nightmare  for me.  Surprisingly enough, I absolutely love it!!  Then…there is the gravy.  Gravy with no meat “drippings”…I always see that special ingredient in cookbooks ( whatever that means ewwwwww).  This gravy gets eaten up every Thanksgiving when I make it…no questions asked..they must love it right?

So you are probably thinking…this is not really stew?!  And you are right…it really isn’t, but if you put enough of that incredible tasting gravy on it, and are really greedy with it, it will be just like stew!  Trust me…you will want to.  There is definitely no shame in this gravy!  You don’t need to be a vegetarian to like it either πŸ™‚

Ingredients
  1. FOR THE STEW
  2. 1 package of seitan ( cut into cubes )
  3. 3 large carrots ( cut into small cubes )
  4. 10-12 small new potatoes potatoes ( cut in half )
  5. 2 -3 cups of frozen peas
  6. 1/2 onion thinly sliced
  7. olive oil
  8. barbecue seasoning
  9. FOR THE GRAVY
  10. 1/4 cup white or whole wheat flour
  11. 2 cups vegetable broth
  12. 2 tbsp nutritional yeast
  13. 1 tsp garlic powder
  14. 1 tsp onion powder
  15. 2 tbsp soy sauce
  16. 1/2 tsp black pepper
Instructions
  1. Preheat oven to 400ΒΊ
  2. Chop up all of the veggies and the seitan
  3. Toss all together in a large bowl with olive oil, and seasoning
  4. Place in a large casserole dish
  5. Cook for 1 hour
  6. Toast dry ingredients over low heat until aromatic
  7. Slowly add veggie broth, whisking to remove any clumps or you can use a hand mixer
  8. Add soy sauce, mustard and stir well
  9. Simmer on low heat until thick
  10. Remove veggies and seitan from the oven
  11. Serve immediately into bowls, and add your desired gravy amount

  1. For the gravy it says ‘Add soya sauce and mustard and stir well’ but no mustard is mentioned in the gravy ingredients, how much and which type of mustard should be added to the gravy? Thanks

      1. Thanks! πŸ˜€ I left it out. It was a tasty dish, thanks for sharing. I think my oven runs a bit hotter, I’ll toss in the other veggies after the potatoes next time as they were a little over cooked (not the potatoes) or maybe slice the carrots and onions thicker. We enjoyed it, thanks πŸ™‚
