Vegan Tofu Scrambled Eggs

Breakfast for me is actually a drag.  I would prefer to just make myself a vegetable juice in the juicer, and be on with my day.  Then I will remember in the back of my head that “breakfast is the most important meal of the day”.  Bleh.  Now what do I do?  Aren’t the vegetables enough?  They are, but they aren’t.  Ok, so I don’t want eggs, so now what?  Ok, let’s make some fake scrambies  (as my kids call them …a.k.a Vegan Tofu Scrambled Eggs), and add some great color to them with turmeric and nutritional yeast.  Add some roasted breakfast potatoes on the side, and there ya have it.  The most important part of this recipe, is to make sure and use organic non GMO tofu.  You don’t want to put any of that junk in your body while you are trying to be healthy!  Why companies even make GMO tofu, is beyond me.   Anywho…enjoy these protein packed mock scrambies.  Don’t think they they are gonna taste exactly like the real deal, but they are just as good, and much better for you!

Ingredients
  1. 1 Package ( around 16 oz) organic firm tofu
  2. 1 tsp turmeric
  3. 2 tbsp nutritional yeast
  4. 2 tsp extra virgin olive oil
  5. Chives ( for garnish)
  6. salt to taste
Instructions
  1. Drain tofu by placing a paper towel on it and pressing down, to get rid of all the liquid
  2. Place tofu in a medium bowl, and smash with a potato smasher to desired chunkiness
  3. Heat a skillet on medium heat, and add olive oil
  4. add tofu, and stir well for about 4-5 minutes until the water from the tofu has evaporated
  5. add turmeric, nutritional yeast and salt and cook for about 3-4 minutes
  6. Garnish with chives, and serve with breakfast potatoes, or even make a breakfast burrito!
