Zucchini Meatballs with Marinara

There comes a time in all of our adult lives when we need to stop eating foods that are on a children’s menu at a restaurant. Aka, chicken fingers, ( why are they called that anyway?), hamburgers, hot dogs, spaghetti and meatballs…WAIT!  Not so fast….meatballs? OK, so they are not only on children’s menus, but at many Italian eateries.  I am sure they are great, but the greasy, fat filled, not one healthy thing about em’ balls just aren’t good for you.  That is all about to change.  These little babies are packed with vitamin rich zucchini, and the breadcrumbs and egg hold them together for a texture similar to meat, so you won’t be missing much. They are super good with my classic marinara sauce .  They will fill you up, so pair it with a great salad, and you are set!

Zucchini Meatballs with Marinara

Ingredients
  1. 2 Medium zucchini ( shredded)
  2. 1 Cup Italian breadcrumbs
  3. 1/4 Cup Gran Padano cheese ( grated)
  4. 2 Garlic cloves (minced)
  5. 1 Egg ( beaten)
  6. 3 Basil leaves ( optional)
  7. 2 Cups Classic marinara sauce ( recipe link can be found above)
  8. 1 Tbsp. olive oil
  9. Salt & pepper to taste
Instructions
  1. Heat oven to 375º, and spray non stick cooking spray to a baking sheet
  2. Put olive oil and garlic into a large pan and cook until you can smell the garlic
  3. Add shredded zucchini, salt and pepper and cook on medium heat, until the zucchini starts to brown, and there is no more water in the pan from the zucchini
  4. In the meantime, grab a medium bowl and mix the breadcrumbs, egg, cheese, and basil, until blended well.
  5. Add the zucchini, and mix well
  6. Roll into small to medium sized balls, place on the baking sheet, and bake for 25-30 minutes, until the tops have started to brown
  7. While the meatballs are cooking, heat up the marinara sauce
  8. Remove the zucchini balls from the oven , and place in the sauce. Let them simmer in the sauce fro about 5 minutes, or until everything is heated through.
  9. Add more shredded cheese on top.

Shred or grate the zucchini with the medium holes on the grater ( does that even make sense)? Then add the the pan with the olive oil and garlic, until the water evaporates, and the zucchini is a bit browned.
Add all of the ingredients ( sans zucchini) while the zucchini is cooking. Mix everything well. Once the zucchini is cooked, place it in the bowl, and mix.
Roll zucchini mixture into small to medium sized balls ( or the size you want…there are no right or wrong size!) Let them bake for 25-30 minutes. In the meantime heat up the marinara. Once the balls are done ( I laugh every time I say that for some reason) place them in the warm sauce, and let them simmer for 5 minutes.
